They've got a lot of different facets, and I think those different facets make almost any dwarven class appropriate. Of the classes you're considering, I personally think warrior makes more sense. The Wildhammers are known warriors. Tauren paladins aren't really paladins, they're "sun druids" who worship the sun instead of the moon. for obvious balancing issues they couldn't add Sunwalker as a playable class, and the next closest thing was the paladin. People tend to forget that mechanics don't have to equal lore. Tauren Sunwalkers aren't Paladins, they just use the mechanics to represent their unique class. The same could easily be done for mages.
